Enjoy this very simple Ratatouille recipe, served with Squacquerone cheese from Italy.
Ingredients (Serves 6)
300g courgette
300g aubergine
350g Squacquerone cheese
1 red pepper
1 green pepper
1 yellow pepper
1 onion
5 tablespoons extra virgin olive oil
Thyme, oregano, basil, salt and pepper to taste
Instructions
Wash the peppers, remove the seeds and dice into cubes. Peel and finely chop the onion.
Gently fry the pepper and onion in a little oil over a medium heat.
Wash the courgettes and aubergines and dice into cubes. When the peppers are half-cooked, add the courgettes and continue to cook, stirring frequently.
When the courgettes are half-cooked, add the aubergine, thyme, oregano and basil. Season to taste and continue to cook until vegetables are softened.
Serve the hot ratatouille accompanied by a bowl of squacquerone.
